Plate Cost

The cost of ingredients in a single plate of a dish.

Definition

Plate cost is the recipe-implied cost of ingredients for one plate of a specific dish. It's the foundation of menu pricing and the only honest baseline for plate-cost leak analysis (theoretical vs actual food cost gap).

Worked example

Butter Chicken plate cost: chicken 200g (₹50) + butter 30g (₹15) + cream 30ml (₹9) + spices/onion (₹6) = ₹80 plate cost.
