Onion Price Crisis

Periodic 2–4× spike in onion mandi prices, usually Aug–Nov in poor monsoon years.

Definition

Onion is the single biggest commodity that destabilises Indian restaurant food cost. A typical crisis: ₹20/kg → ₹80/kg over 2–3 weeks. The fix is dual: lock supplier price 2 weeks early when Forkcast's signal fires, and push menu items that use less onion during the spike window.
