Kitchen Throughput

Maximum covers a kitchen can plate per hour given cooks × stations × pass speed.

Definition

Throughput is the kitchen's hard ceiling. A kitchen rated for 130 covers/hour cannot serve 180 — the extra 50 walk away or wait 45 minutes. Forkcast checks tomorrow's forecast against throughput and flags 'capacity risk' early enough to add a cook or limit an OFOR (online food-order rush).
