Ingredient Shrinkage

The unexplained gap between ingredients sold (recipe-implied) and ingredients bought.

Definition

Shrinkage = (purchased − recipe-implied) for a tracked ingredient. A 22kg unexplained chicken gap in a 96kg week is shrinkage from spoilage, pilferage, free meals, or over-portioning. Forkcast computes this weekly and flags abnormal weeks.
