Buffet Par Level

The amount of each buffet item prepared for a service period.

Definition

Par level is the prep quantity per item per buffet shift. Setting it from a 30-day historical average (the default in most hotels) ignores tomorrow's occupancy + group block and produces 15–20% wastage. Forecast-driven par levels cut wastage to 6–10%.
