Cover (F&B)

One paying guest at one meal in one outlet.

Definition

A cover is the unit of F&B demand. 'Tomorrow's lunch covers at the ADD buffet: 130' means 130 guests are forecast to eat lunch tomorrow. Covers × average cheque = revenue, the foundational F&B equation.
