IPL season: 60 day demand playbook for QSR & bars

How Indian QSR, cloud kitchens, bars and sports lounges should plan the 60 day IPL season; match night demand, screen rights, menu, delivery.

By Forkcast Editorial · HORECA research team

IPL is the longest concentrated demand window for sports bars and the biggest delivery boost for QSR/cloud kitchens. 60 nights of match day demand can move 10-18% of annual revenue for the right format. Here's the operational view.

The demand pattern

FormatMatch day liftOff day liftNotes
Sports bar / pub2.0-3.2×0.7×Pre match 6-7:30pm + innings break
Cloud kitchen (delivery)1.5-2.0×1.0×Peak 8-11pm; pizza/biryani/wings dominate
QSR dine in1.1-1.3×0.9×Lift only if screens; otherwise flat
Casual fine dine0.8×1.1×Net negative on match nights
Banquet / event venue1.4-1.8×1.0×Match screening parties

Sports bar P&L: example match night

150 cover sports bar in tier 1 city on an RCB home match night:

LineAmount
Average cover (food)₹450
Average cover (alcohol)₹950
Total revenue (150 × ₹1,400)₹2,10,000
Food cost (30%)₹20,250
Beverage cost (22%)₹31,350
Variable labour₹15,000
Screen rights amortised (60 nights)₹1,200
Variable contribution₹1,42,200

A regular Wednesday in March pre IPL would see ~₹65-90k revenue for the same outlet; match night nearly triples it. Across the 60 nights, IPL season can deliver ₹50-80L of net contribution for a single bar.

Match night menu engineering

Two hand finger food dominates: anything that lets a guest watch the screen and eat without cutlery. Hero SKUs:

  • Chicken/paneer wings (8 pcs at ₹280-380; food cost 32-38%)
  • Loaded fries / nachos (single ₹220-320, large ₹380-480)
  • Slider / mini burger trios (₹360-480)
  • Tandoori platters (₹650-1,200 for sharing)
  • Pitchers of beer (₹650-950; drives bar revenue 2× faster than individual pints)

Cloud kitchen / delivery playbook

  1. Pre prep your top 8 SKUs by 7pm; match starts 7:30pm
  2. Set delivery promise tight (≤25 min total); late delivery during match window = cancellation
  3. Run a 'match night combo' priced ₹500-800 (pizza + wings + dessert); checkout is faster than a la carte
  4. Run aggregator paid ads only during ad breaks; CPC drops 30-50% inside the play window because food app browsing dips
  5. WhatsApp broadcast to repeat customers at 6:30pm; most match night customers decide ordering by 7pm

Sports bar playbook

  1. Reserve tables; turn down walk ins for 7pm onwards if a high demand match (book by phone, ₹200 cover charge to lock)
  2. Cover charge ₹300-800 for derby matches (RCB CSK, MI CSK)
  3. Promote during innings break; short happy hour 8:45-9:15pm pulls 2nd-innings drinks
  4. Pre batch cocktails for speed; 4 tap beer counter beats single pour every time
  5. Run a sub bar 'fast counter' selling beer + pre made cocktails + finger food
